BROWN RICE BOWL WITH GREENS, POACHED EGG & HARISSA
Prep/Cooking Time: 15-30 Minutes

• 400g Brown rice
• 4 Eggs
• 2 Avocados
• 200g Cucumber
• 120g Spinach (cooked)
• 100g Green onions
• 120g Green bell pepper
• 40g Sweet red chilli
• 40g Cilantro
• 2 Lemons
• 40g Olive oil
• Salt
• Pepper
• 100g Harissa
Instructions
• Bring to the boil 1 ltr of salted water
• Add the rice to the pan and cook till tender
• Once the rice is cooked strain from the water and spread out on a tray to cool, leave to cool naturally
• Peel the cucumber and remove the seeds
• Trim the green onions and remove the roots
• Cut the cucumber and green onions into small pieces and place in a mixing bowl
• Take the bell pepper and chilli pepper and wash, dry and de-seed
• Finely slice the peppers and add to the mixing bowl
• Peel the avocados and remove the pit
• Cut the avocado into bite size pieces and add to the bowl
• Roughly chop the cooked spinach and add to the bowl
• Wash and dry the cilantro and pick off the leaves
• Squeeze the lemons and reserve the juice in a small bowl
• Poach the eggs in salted & vinegar boiling water
• When the egg is cooked remove from the water and dry off
• Add the rice, lemon juice, olive oil and cilantro leaves to the bowl and toss
• Season with the salt and pepper
• Spoon into a bowl to serve and place the poached egg on top
• Finish with a spoon of Harissa on top of the poached egg
