BOLOGNESE

Ingredients

  • 6 Kilo Minced Beef
  • 6 Kilo Minced Pork
  • 2 cans Chopped tomatoes
  • 250g Tomato paste
  • 1 Bunch Basil
  • 30g Thyme
  • 30g Oregano
  • 3-4 Pieces Parmesan skin
  • 800g Carrot
  • 800g Celery
  • 800g Onion
  • 150g Garlic
  • 4-5 Bay leaves
  • Salt
  • Pepper

Instructions

  • Heat a thick bottomed pan over a high gas
  • Add enough oil to coat the bottom of the pan
  • Once the oil smokes add the beef and pork and leave to fry
  • After a few minutes turn the meat to allow to color
  • Keep turning every few minutes till all meat is browned
  • Add to the pan the cleaned, peeled and chopped vegetables
  • Stir in well and continue to cook, the veg will color a little and begin to soften
  • Add the tomato paste and the herbs and mix through well
  • Once well mixed add to the pan the chopped canned tomatoes and stir well
  • Add a generous amount of slat and pepper
  • Bring to a fast simmer then turn down to a slow simmer
  • Cook over a low gas turning regularly for 3-4 hours
  • Check the meat occasionally and the liquidity for tenderness and moisture
  • If beginning to evaporate dry add a little water
  • Once the meat is tender remove from the heat and season to taste
  • Leave to cool on trays 
  • Once cold place in the fridge till needed
