BLACK BEAN & MUSHROOM PATTY
Prep/Cooking Time: 30-45 Minutes

- 300g Black beans (canned, drained)
- 100g Brown mushrooms or shitake
- 50g Red onion
- 4 cloves Garlic
- 30g Spinach
- 3-4 Egg whites
- 120g Panko breadcrumbs
- 2 tsp Cumin
- 1 tsp Chili powder
- Salt to taste
- Pepper to taste
- 20ml Olive oil
Instructions
- Drain the canned black beans and place in a steel bowl
- Wearing gloves crush the beans till a rough consistency is achieved
- Reserve on the side till needed (keep at room temperature)
- Place a thick bottom pan over a medium heat and add the oil
- Whilst the pan is heating peel and finely chop the onion and garlic
- Add the garlic and onion to the pan and cook till softened
- Add the spices to the pan and cook for 2 minutes
- Add to the pan the roughly chopped mushrooms and cook till they too are softened
- Finally add to the pan the cleaned spinach and cook till wilted
- Once cooked remove from the heat and add to the bowl with the black beans
- Leave to cool uncovered so the steam can escape
- Once cool enough to handle add the egg whites to the bowl
- Mix all the ingredients together
- Once well mixed taste and add seasoning
- Once the right taste is achieved shape the mix into 190g patty's
- Leave to cool before packing.
- It is important to handle these with care as they are not as robust as beef burgers and could break.
