BERRY JELLY WITH COOKIE CRUMBLE

Prep/Cooking Time: 30-45 Minutes

Ingredients

  • 80g frozen mixed berries
  • 100g water
  • 30g sugar
  • 15g white wine
  • 2g gelatine
  • 40g crumble
  • 20g cream
  • 10g sugar
  • 1 piece mint

Instructions

  • Place the berries, sugar and water in a pan
  • Bring to the simmer and add the white wine
  • Remove from the heat
  • Soak the gelatine in cold water for 2 minutes till softened
  • Once softened drain the gelatine and add to the berry mix
  • Pour the berry mix into a tray and place in the fridge to cool and set
  • Place the cream and sugar in a bowl and whisk till firm
  • To serve spoon the jelly into a glass
  • Layer the jelly with crumble crumbs till the glass is full
  • Top with the whipped cream and mint
