BERRY JELLY WITH COOKIE CRUMBLE

- 80g frozen mixed berries
- 100g water
- 30g sugar
- 15g white wine
- 2g gelatine
- 40g crumble
- 20g cream
- 10g sugar
- 1 piece mint
Instructions
- Place the berries, sugar and water in a pan
- Bring to the simmer and add the white wine
- Remove from the heat
- Soak the gelatine in cold water for 2 minutes till softened
- Once softened drain the gelatine and add to the berry mix
- Pour the berry mix into a tray and place in the fridge to cool and set
- Place the cream and sugar in a bowl and whisk till firm
- To serve spoon the jelly into a glass
- Layer the jelly with crumble crumbs till the glass is full
- Top with the whipped cream and mint
