BELL PEPPERS FILLED WITH RATATOUILLE

Ingredients

  • 6 Red or yellow bell peppers
  • 25ml Olive oil
  • Salt
  • Pepper
  • 960g Ratatouille 

Instructions

  • Wash the bell peppers and pat dry
  • Cut the bell peppers from top to bottom through the stem
  • Place the bell pepper halves on a baking tray
  • Drizzle with the olive oil and season with the salt and pepper
  • Place the tray in the oven and cook at 180c
  • Cook for around 12-15 minutes or until the peppers are beginning to soften
  • Remove from the oven and leave to cool
  • Once cooled fill each pepper half with 80g of the ratatouille mix
  • Place 2 filled pepper halves in a oven safe container and cover with a lid
  • Reserve in the fridge till needed
