BELL PEPPERS FILLED WITH RATATOUILLE
Prep/Cooking Time: 30-45 Minutes

- 6 Red or yellow bell peppers
- 25ml Olive oil
- Salt
- Pepper
- 960g Ratatouille
Instructions
- Wash the bell peppers and pat dry
- Cut the bell peppers from top to bottom through the stem
- Place the bell pepper halves on a baking tray
- Drizzle with the olive oil and season with the salt and pepper
- Place the tray in the oven and cook at 180c
- Cook for around 12-15 minutes or until the peppers are beginning to soften
- Remove from the oven and leave to cool
- Once cooled fill each pepper half with 80g of the ratatouille mix
- Place 2 filled pepper halves in a oven safe container and cover with a lid
- Reserve in the fridge till needed
