AVOCADO AND FETA ON RYE WITH PICKLED RED ONIONS

Ingredients
- 4 Slices Rye bread
- 2 Avocados
- 200g Feta cheese
- 80g Pickled red onions
- 60g Green onions
- 1 Lemon
- 50g Olive oil
- Salt
- Pepper
Instructions
- Slice the Rye bread 1" thick
- Drizzle with olive oil and place in the panini grill
- Cut the avocados in half and remove the pitt
- Peel the avocado halves trying to keep as neat as possible
- Slice the avocados and keep on the side
- Crumble the Feta into small crumb pieces
- Once the Rye is toasted remove from the grill and place on the centre of the plate
- Arrange the avocado slices on top (1/2 avocado per serving)
- Then top with the crumbled Feta
- Drian the pickled onions and add to the top of the dish along with the sliced green onions
- Drizzle the dish with the lemon juice and olive oil
- Serve immediately
