AVOCADO AND FETA ON RYE WITH PICKLED RED ONIONS

Ingredients

  • 4 Slices Rye bread
  • 2 Avocados
  • 200g Feta cheese
  • 80g Pickled red onions
  • 60g Green onions
  • 1 Lemon
  • 50g Olive oil
  • Salt
  • Pepper

Instructions

  • Slice the Rye bread 1" thick
  • Drizzle with olive oil and place in the panini grill
  • Cut the avocados in half and remove the pitt
  • Peel the avocado halves trying to keep as neat as possible
  • Slice the avocados and keep on the side
  • Crumble the Feta into small crumb pieces
  • Once the Rye is toasted remove from the grill and place on the centre of the plate
  • Arrange the avocado slices on top (1/2 avocado per serving)
  • Then top with the crumbled Feta
  • Drian the pickled onions and add to the top of the dish along with the sliced green onions
  • Drizzle the dish with the lemon juice and olive oil
  • Serve immediately
