ASIAN PEAR & CHOI SUM SALAD

- 80g Asian pear
- 100g Choi sum
- 80g Chinese radish
- 100g Cucumber
- 10g Lemon juice
- 10g Olive oil
- 4g Cilantro
- 20g Sugar
- 40g White wine vinegar
- 1/2g Chili flakes
Instructions
- Wash the Choi sum and dry off
- Cut the Choi sum into 1/6s from bottom to top
- Reserve in the fridge till needed
- Peel the Chinese radish and cut into thin strips about 6" in length
- Reserve in the fridge
- Wash and remove the ends from the cucumber
- Cut into 1/4s lengthwise
- Cut the cucumber on the bias into long strips
- Again reserve in the fridge till needed
- Pick the cilantro into plushes and reserve in the fridge
- Place the vinegar, sugar, chili flakes and olive oil in a small bowl
- Leave to sit till the sugar is dissolved and the chili has infused the liquid
- Reserve in a squeeze bottle till needed
- To make the salad place the Choi sum, radish and cucumber pieces in a small bowl
- Add to the bowl the Asian pear, skin on, sliced as finely as possible
- Add a good pinch of cilantro and drizzle with the dressing
- Season to taste
