APPLE TART

Ingredients
- 1 Kilo green apples
- 2 ea Green apples for topping
- 40g Butter
- 1 Cinnamon stick
- 120g Sugar
- Pre made tart shells
- 1 Recipe of creme Anglaise
Instructions
- Peel the 1 kilo of green apples and remove the core
- Cut the apples into 1" pieces and place in a thick bottom pan
- Add to the pan the butter, sugar and cinnamon stick
- Place over a low heat to allow the apples to cook down slowly
- Stew the apples till they are tender to the bite
- Check the sweetness and add more sugar if necessary. If you add more sugar cook for a further 2 minutes.
- Once desired taste is achieved remove from the heat and leave to cool
- Reserve in the fridge till needed
- To serve take a pre baked tart mold and fill with the stewed apple
- Take the fresh apple and cut in half, remove the core and slice the apple so it can be fanned
- Cover the top of the tart with the apple slices and sprinkle with white sugar
- Cook in the oven for 10-12 minutes
- Once cooked reserve till needed at room temperature
- Serve warm with toffee sauce and a dusting of powdered sugar
- Serve creme Anglaise on the side
