APPLE TART

Prep/Cooking Time: 45-60 Minutes

Ingredients 

  • 1 Kilo green apples
  • 2 ea Green apples for topping
  • 40g Butter
  • 1 Cinnamon stick
  • 120g Sugar
  • Pre made tart shells
  • 1 Recipe of creme Anglaise

Instructions

  • Peel the 1 kilo of green apples and remove the core
  • Cut the apples into 1" pieces and place in a thick bottom pan
  • Add to the pan the butter, sugar and cinnamon stick
  • Place over a low heat to allow the apples to cook down slowly
  • Stew the apples till they are tender to the bite
  • Check the sweetness and add more sugar if necessary. If you add more sugar cook for a further 2 minutes.
  • Once desired taste is achieved remove from the heat and leave to cool
  • Reserve in the fridge till needed
  • To serve take a pre baked tart mold and fill with the stewed apple
  • Take the fresh apple and cut in half, remove the core and slice the apple so it can be fanned
  • Cover the top of the tart with the apple slices and sprinkle with white sugar
  • Cook in the oven for 10-12 minutes
  • Once cooked reserve till needed at room temperature
  • Serve warm with toffee sauce and a dusting of powdered sugar
  • Serve creme Anglaise on the side
