AMERICAN PANCAKES WITH STEWED APPLES
Prep/Cooking Time: 15-30 Minutes
Printable VersionIngredients (Makes 4 portions)
- 250g flour
- 250g milk
- 2 eggs
- 25g sugar
- 20g baking powder
- 30g butter
- 120g apples
- 20g raisins
- 40g sugar
- 2g vanilla
- 10g syrup
Instructions
- Place the eggs and milk in a mixing bowl and whisk together
- Add the sugar and whisk again
- Sift the flour and baking powder and add to the bowl
- Mix together till a smooth batter is acheived
- Melt the butter and add to the batter
- Reserve in the fridge till needed
- Peel and core the apple
- Roughly chop the apple and place in a thick bottom pan
- Add to the pan the sugar, raisins and vanilla
- Cook over a low heat and simmer for 20 minutes
- Remove from the heat and taste (add more sugar if necessary)
- leave to cool
- Reserve in the fridge till needed
To serve
- Coat the griddle or pan with a little butter
- Ladel on the batter
- Cook till golden on the bottom and bubbles have begun to form in the middle
- Flip the pancakes and cook till golden on both sides
- Place the cooked pancakes on a plate
- Finish with the stewed apples and syrup
