AMERICAN PANCAKES WITH STEWED APPLES

Ingredients (Makes 4 portions)

  • 250g flour
  • 250g milk
  • 2 eggs
  • 25g sugar
  • 20g baking powder
  • 30g butter
  • 120g apples
  • 20g raisins
  • 40g sugar
  • 2g vanilla
  • 10g syrup

Instructions

  • Place the eggs and milk in a mixing bowl and whisk together
  • Add the sugar and whisk again
  • Sift the flour and baking powder and add to the bowl
  • Mix together till a smooth batter is acheived
  • Melt the butter and add to the batter
  • Reserve in the fridge till needed
  • Peel and core the apple
  • Roughly chop the apple and place in a thick bottom pan
  • Add to the pan the sugar, raisins and vanilla
  • Cook over a low heat and simmer for 20 minutes
  • Remove from the heat and taste (add more sugar if necessary)
  • leave to cool
  • Reserve in the fridge till needed

To serve

  • Coat the griddle or pan with a little butter
  • Ladel on the batter 
  • Cook till golden on the bottom and bubbles have begun to form in the middle
  • Flip the pancakes and cook till golden on both sides
  • Place the cooked pancakes on a plate 
  • Finish with the stewed apples and syrup
